Perfect leftovers to freeze and pop-in-the-toaster for a quick & tasty breakfast

My amazing Nate walked in the door after work & asked me what the one thing was we didn’t get as a wedding gift that I had really wanted. When he pulled out an extra large Belgian waffle maker I was completely delighted! It was the perfect unexpected dinner (I was thinking tuna melts & canned tomato soup) to celebrate the 30 days we have been married so far. I know what your thinking “one month”, your one of those people…but hey it felt good to be spoiled, and the last month has gone by so fast it was a nice chance to reflect on how wonderful life really is!

We found this amazing recipe at Waffle Recipe.Com. The combination of sparkling water, active yeast, & fluffy beaten egg yokes folded into the batter made them airy and delicious, contrasting the powdered sugar and milk that added a rich heaviness. A perfect combination I will make again & again.

To try this recipe at home you will need the following ingredients:

3 1/4 cups (1 lb. — 500g) all purpose flour
one sachet (7g) instant dried yeast (4-5 tsp, add to 1 cup heated milk, sitting 5-10 min until active & rising)
4 medium eggs (separate yolks, beat egg whites until airy & fluffy)
whole milk (you can also add some sparkling mineral water and make them even fluffier)
two sticks (1/2 lb. — 250g) butter, melted
vanilla sugar
some salt

Combine all ingredients in a large bowl, keeping the egg whites separated, mix well. Fold in egg yolks with spatula/spoon at the very end. The batter should be the consistency of thick pancake mix, & should rise for at least 1/2 an hour. (We couldn’t wait any longer, but it doubled in size & tasted fantastic!)
